The active substances in Cynara scolymus (inflorescence) are caffeic acid derivatives (caffeoylquinic and dicaféoylquinic acid), cynarin (1,3-O-dicaféoylquinic acid), flavonoids (apigenin, luteolin, quercitin), sesquiterpenelactones (cynarotriol, cynaropicrin), anthocyanins (cyanidins), carotenoids, terpenoids, tannins, essential oil, saturated, unsaturated and polyunsaturated fatty acids, fatty acids, saccharides (pectin, mucilage, inulin), amino acids (l-asparagine), proteins, enzymes, vitamin C, potassium (170 mg), magnesium and calcium.

Artichoke has a favourable effect on triglyceride and cholesterol levels thanks to cynarin, chlorogenic acid and luteolin. These polyphenols indirectly inhibit the key enzyme HMG-CoA reductase by reducing insulin levels, without reducing the production of CoQ10, vit. D and sex hormones. Excess cholesterol is more easily eliminated exogenously because cynarin stimulates bile production. Artichoke has antioxidant and protective activity by inhibiting lipid peroxidase.

Caffeic acid derivatives have choleretic properties and lower cholesterol. Flavonoids stimulate the production of bile acid and boost antioxidant activity in the liver and serum. The sesquiterpene lactones impart a bitter taste and have hypercholeretic and anti-inflammatory properties, as well as stimulating the appetite.

Several authors have described artichokes' hypoglycaemic properties. Cynara scolymus contains chlorogenic acid, a specific and powerful inhibitor of glucose-6-phosphatase. Chlorogenic acid reduces the absorption of intestinal glucose. Caffeoylqui-nic acid derivatives have an inhibitory action on the enzyme α-glucosidase and a hypoglycaemic effect. Artichoke leaves also contain inulin, which has a significant influence on intestinal transit, intestinal bacterial flora, cholesterol and triglyceride levels, carbohydrate metabolism and glycaemic regulation.
